Our Oldest Single Barrel Pick Ever

On Monday, March 9, we’re celebrating the oldest single barrel we’ve ever released at Post Oak: a 9 year, 1 month High Rye Bourbon that we picked with our friends at Mythology Distillery in Steamboat Springs, Colorado.

This barrel has a one of a kind aging story—over 6 years aging on the Front Range at 5280’, then moved up to the high mountain air of Steamboat Springs at 6900’ for the remaining 3 years. That elevation shift created an exceptionally high “Angel’s Share”, meaning the barrel lost far more volume to evaporation than normal—so we’re getting less than two thirds of the yield we typically see.

Why that matters

During barrel aging, whiskey slowly evaporates through the wood. Distillers call that loss the Angel’s Share, and it can run roughly 2–5% per year depending on conditions. The key detail is that water and alcohol don’t evaporate at the same rate—humidity and temperature influence whether proof trends up or down over time. In drier conditions, water can evaporate faster, which often leaves a whiskey more concentrated and sometimes higher in proof.

High Angel’s Share barrels are prized because what remains is often richer and more concentrated, with deeper oak influence and layered flavor.

And because this barrel is yielding so little, it will be gone with the dinner. After March 9, you won’t be able to buy a bottle like this from us again!
